Passito di Malvasia di Casorzo, red wine, 2019 – 375 ml

Malvasia di Casorzo is a grape variety grown in the municipality of the same name in Monferrato, whose production is limited to 100 hectares of surface area. The management in the field required that towards mid-September, when the grapes were phenolic ripe, the fruiting head was cut directly from the plant in order to begin the drying process in the field. Once harvested, the grapes were placed in the company’s barn to further concentrate the must, gradually eliminating the individual grapes compromised by mold and keeping only the botrytized ones. This was followed by crushing and destemming with fermentation in steel, and then the refinement continued for three years in wooden barrels.
